Roasting Garlic in a Terra Cotta Roaster

Whole garlic bulbs with loose outer skin removed Terra cotta garlic roaster 1 tablespoon of first, oil per garlic bulb
  1. Soak terra cotta dome in cold water for approximately 15 minutes.
  2. Cut 1/2″ to 3/4″ off the top of the garlic bulbs, exposing the clove tops.
  3. Place bulbs on terra cotta base.
  4. Pour 1 tablespoon of olive oil on top of each bulb.
  5. Cover the terra cotta base with the wet dome.
  6. Place the terra cotta roaster in a cold oven (do not preheat oven) and bake for 50 to 60 minutes at 325 to 350 degrees F.
  7. Place the roasted garlic on vegetables of your choice, crackers or warm spelt bread.

Didja' Know!

  • Garlic flavor and intensity can be regulated by how small it is chopped. The finer it is crushed the stronger it will be so if you are cooking with it and you want a lot of flavor cut it up very small.
  • There are sulfur compounds in garlic that create allicin; allicin is the chemical that is created when you bruise garlic.  Allowing the garlic to sit for at least 5 minutes lets the sulfur compounds mingle and create the health benefiting chemical allicin.
  • If you plan on cooking with Garlic, to get the heart healthy benefit of allicin, you should "bruise your garlic" and let it sit at least 5 minutes before putting it on the heat to cook.

Black Garlic:  What is it?
We have received several inquiries to purchase black garlic.
What is Black Garlic:  Black Garlic is a fermented garlic,
Why we can't sell Black Garlic:  We do not have a health department kitchen license to process fermented garlic. 
How do I make Black Garlic:  However I believe there are many recipes online.  This google.com search button will provide some info.

We have people often request Strong Garlic.

 We then need to ask . . .   What do you mean by strong? 
  • Do you want intense garlic flavor, or a hot garlic?
  • We have several garlic varieties that are a very intense garlic flavor - IE meaning, pungent powerful garlic flavor.
  • And, we also have garlic varieties that have an intense heat along with a nice garlic flavor.

When Can I order your Garlic??

  • We no longer provide pre-order of garlic.  Since garlic is a living thing, we have found that unexpected weather can damage the garlic during the growing process.  To ensure we can fulfill our garlic orders, we now wait until we harvest the garlic prior to posting quantities available for purchase.

When Should I expect to receive my Garlic order?

  • We harvest the garlic in the end of June to the middle of July depending on the variety. 
  • We then sort, tie and hang the garlic to "cure", or dry down to ensure that it will not be bruised.  Fresh "green" garlic is very delicate when it is first harvested and can bruise easily causing rotten cloves.
  • After the garlic fully cures, we can begin packaging the garlic and mailing it via USPS Priority mail - typically in early September.
  1. Are you looking to grow garlic or cook with garlic?
    • We have two main sizes that are sorted for sale:  SEED - the largest, and CULINARY - exactly the same flavor etc but the smaller bulbs for cooking and eating.
