We've been shipping out our garlic all over the United States.  We hope you are happy with the produce you receive.  It was a tough growing season in Mid-Western Michigan, started with very warm weather in March, then multiple freezes and then extremely hot dry weather until after harvest.  We made our best effort to select the best bulbs to ship to you.  Please let us know what you think of the garlic.

For soups and sauces, can I use unripened elephant garlic, harvested in April before the bulb is mature, in the same manner as a leek, using green stalks as well as bulb?

Response from Rickertville Farm:
Dorothy,
Elephant garlic is actually a type of  leek which has a mild garlic characteristics, with an earthy overtone that many people prefer over the heat of true garlic.  When harvesting the mature Elephant Leek/garlic it need to cure, age for 30 days, prior to usage or it will have a bitter taste.

However, the scape, or flower stalk, is editable.  Since many people sell the Elephant "Garlic" scape as a true garlic scape there should be no reason that the green Elephant leek/garlic would not have the same palatability as it's scape.  As for harvesting the green "garlic", and using it as a leek in soups etc, I would suggest tasting it prior to cooking with it.

Recipe to make creamy garlic prawns

Ingredients
·         Large fresh prawn 1 kg, shelled with left on tails
·         Whipped cream 300 ml
·         5 garlic cloves, finely chopped
·         2 garlic cloves, thinly chopped
·         Cornflour 1 ½ teaspoon
·         Chives ½ bunch, finely chopped
·         Chicken stock powder ¼ teaspoon
·         Sugar ¼ teaspoon
·         Freshly cracked pepper ½ teaspoon
·         Cornflour 1 teaspoon
·         Olive oil 1 tablespoon

Method

Keep all the ingredients ready before you go for cooking.

Take out a bowl. Take whipped cream, cornflour, finely chopped garlic cloves, chives, chicken stock powder, sugar and cracked pepper on the bowl. Mix it well to form a mixture.

Now, take out another bowl and put cornflour and garlic with ½ of the total oil taken as the ingredient.

Now, bring a pan and put it on flames. Put the remaining oil, thinly chopped garlic and heat it. Toss in the prawns and add the cornflour garlic mixture in it. Cook it until the prawns become golden or ¾ cooked.

Add cream to the pan and cook it for another 2 minutes until it turns thick. When it will start leaving a soothing smell, you should know that it is cooked. Take it out of the flames and garnish it.

For garnishing

·         Use chopped onions
·         Melted butter
·         Slices of lemon

Take out a shallow bowl; put the cooked prawns on it. Decorate it with chopped onions from each of the sides. Keep slices of lemon on it. To add a flavor, you can sprinkle 2 teaspoon of melted butter above the cooked food.

If you are calorie conscious, then skipping the butter will not bring any change to the taste.

If guests are there, you can serve it hot with pieces of breads. It will serve 3-4 people easily. It will help you prepare a great seafood recipe at your own place without any additional preparation beforehand.

So, what are you waiting for? Try this delicious recipe at home and enjoy the juicy, yummy and divine taste of prawns at ease.
